We are trying this out tonight for the first time.

Recipe Ingredients for Herb Quinoa with Pine Nuts and Asparagus

1 cup quinoa
2 cups water
1 tsp chicken bouillion
4 tbsp pine nuts
1/2 cup fresh cilantro
1 tblsp lime juice

Recipe Directions for Herb Quinoa with Pine Nuts and Asparagus

  1. mix bouillion and water

  2. add quinoa

  3. bring to a boil

  4. reduce to simmer for 15-20 minutes (or until all liquid is absorbed)

  5. Meanwhile, toast pine nuts in a dry skillet over medium heat for about 2 minutes.

  6. juice lime

  7. chop cilantro

  8. when quinoa is done, fluff with a fork and toss in pine nuts, lime juice and cilantro.
