Recipe Ingredients for Herb and Onion Frittata

1/2 cups egg substitute
1 cup onion, chopped (shallots preferred)
1 tsp olive oil
2 tbs cheese, farmers
1/4 cup water, plus 1 tbs

Recipe Directions for Herb and Onion Frittata

  1. in a saute pan add 1/4 c water and onion, cover and bring to a boil over med-high heat for about 2 min

  2. uncover and continue to cook until water is gone.

  3. add 1 tsp olive oil and cook unitl onions have browned

  4. add egg substitute and cook until it begins to firm

  5. add herbs and cheese and cook until cheese melts
