From Southern Living, April 2008. Each serving is 3 ounces chicken, cooked

Recipe Ingredients for Herb-Grilled Chicken

24 oz boneless, skinless chicken breast
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp fresh rosemary
1 tsp fresh sage
8 cups fresh spinach

Recipe Directions for Herb-Grilled Chicken

  1. Preheat grill to 350 degrees F to 400 degrees F (medium-high heat)

  2. Rub chicken breasts evely with olive oil

  3. Sprinkle with salt and pepper

  4. Cut a small slit at one end of each chicken breast and the end of one fresh herb sprig into each slit, laying sprigs over top of chicken

  5. Grill chicken breasts, covered with grill lid over 350 degree F to 400 degree F (medium-high heat) for 6 to 7 minutes on each side or until done

  6. Serve over fresh spinach
