Herb and Goat Cheese Stuffed chicken breasts

Recipe Ingredients for Herb and Goat Cheese-Stuffed Chicken Breasts

1/4 cup Bread Crumbs
1 oz Mint
2 tbsp Parsley
4 oz Goat, Soft Type Cheese
6 oz Fresh Boneless Skinless Chicken Breasts
3 serving Extra Virgin Olive Oil
1 serving Crushed Red Pepper
10 oz Spinach

Recipe Directions for Herb and Goat Cheese-Stuffed Chicken Breasts

  1. Preheat broiler to high.

  2. Combine panko, mint, parsley and goat cheese.

  3. Cut horizontal slit in each breast half to form a pocket.

  4. Stuff 2 tbsp of cheese mixture into each pocket.

  5. Close opening with a toothpick.

  6. Heat nonstick skillet over med-high heat.

  7. Add 1 tbsp of oil to pan.

  8. Add chicken and cook 2 min on each side or until browned.

  9. Arrange chicken on baking sheet.

  10. Broil for 8 min or until done.

  11. Heat skillet over med-high heat.

  12. Add remaine oil, red pepper and spinach.

  13. Cook for 2 min or until spinach wilts
