Tasty! From my Weight Watchers cook book. I used swai fillets, but the recipe says snapper. Note: Be sure you pat the fish dry with paper towels before you put the coating on the top otherwise the coating will not 'crust'.

Recipe Ingredients for Herb-Crusted Fish Fillets

1 lb red snapper fillets
1/4 cup white wine
1 clove garlic, minced
3 tablespoons dried parsley
1 tsp dried oregano
1 tsp dried thyme
1/4 tsp sea salt
1/4 tsp ground black pepper
1 tsp extra virgin olive oil
2 tablespoons bread crumbs
2 tsp lemon zest
2 tablespoons lemon juice

Recipe Directions for Herb-Crusted Fish Fillets

  1. Preheat oven to 375. Coat a glass baking dish with cooking spray. Rinse fish and pat dry with paper towels.

  2. In a small bowl, combine all ingredients except the fish. Set aside for about 10 minutes to let it turn to a paste-like consistency.

  3. Arrange fish fillets in glass dish, skin side down (if it has skin on it).

  4. Using a spatula, evenly coat the top of the fillets with the paste mixture.

  5. Place, uncovered in the oven for 12-15 minutes or until fish flakes easily and top is nicely crusted. Serve.
