very light and fluffy souffle not too cheesy. can use any cheese and any herbs of choice.

Recipe Ingredients for Herb and Cheese Souffle

3 1/2 tbs butter
1/4 cup unbleached bread flour
1 1/2 cups skim milk
6 eggs
1 dash cayenne
1/2 cup parmesan cheese
1/3 cup cheddar
1 tsp fresh chives
1 tsp fresh parsley

Recipe Directions for Herb and Cheese Souffle

Preheat oven to 375. Mix egg whites until fairly stiff. Use butter to grease baking dish. melt the rest in a small saucepan over md-low heat. when foam subsides, stir in flour and stir until it darkens (~3 min). Turn heat to low and whisk warmed milk a little at a time until the mixture is thick. Let cool a few minutes. Beat in egg yolks, a little salt and pepper, cayenne, cheeses, and herbs. Add 1/3 of egg white and stir in. Gently fold in the rest of the egg whites. Poor into baking dish and bake ~ 30 min. Check interior, if still quite moist bake another 5 minutes.
