Recipe Ingredients for Herb Breaded Scallops

4 slices of honey wheat bread
2 tbs minced herbs
1 tsp salt
1/2 tsp pepper
1 1/2 pounds of bay scallops
2 tbs butter
2 tbs olive oil

Recipe Directions for Herb Breaded Scallops

  1. In a large bowl, combine bread, herbs, salt, and pepper.

  2. Mix well.

  3. Add scallops, toss to coat.

  4. In a large nonstick skillet melt butter in oil over med-high heat.

  5. Add scallop mixture and cook, toss occasionally, until lightly browned and firm, 20-30 minutes.

  6. Serve immediately.
