This recipe is packed full of flavor! And who can resist bacon??!! (Also, you can feel free to toss in any cheese you like (feta is great) or croutons if you like!)

Recipe Ingredients for Herb & Bacon Salad

6 cups Organics Baby Romaine
2 cups fresh herbs
150 grams bacon
1/2 cucumber, sliced
1 large tomato, sliced
1 green onion, sliced
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp Whole Grain Dijon Mustard
1 tsp sugar
1/2 tsp salt
1/2 tsp black pepper

Recipe Directions for Herb & Bacon Salad

  1. Preheat your oven to 200 degrees C ( or about 375 F)

  2. In a large bowl, add your lettuce (baby romaine, spring mix, or any baby variety works fine!) and your fresh herbs. (For my salad, I picked fresh flat leaf parsley, basil, thyme and oregano from my garden. Please use whatever fresh herbs you have on hand or prefer. Basil really is perfect though! :) ) Make sure that you rinse your herbs, but avoid chopping them and remove only the woody stems!

  3. Slice your tomato, cucumber, and green onion and add to your salad.

  4. In a glass baking dish, lay your bacon slices flat and slightly spread apart. Place in oven and cook until your desired crispness. For this recipe, I recommend crispier bacon! :) It should take about 10-15 minutes, but keep your eye on them or they may scorch!

  5. While the bacon cooks, whisk together in a small bowl your olive oil, vinegar, mustard, salt, pepper, and sugar.

  6. Remove bacon from the oven when done and feel free to lay your bacon on paper towels to remove any excess fat! HOWEVER, do not toss out the liquid bacon fat from the bottom. Instead, carefully spoon about 1 tbsp worth of the bacon fat into your salad dressing bowl and whisk it all together!

  7. Place your bacon slices (150 grams is about 8 slices) on top of your salad, and pour your dressing over the salad. garnish with more fresh herbs!

  8. Enjoy quickly while it is still warm. Great with fresh bread!
