Stuffed Poblano Peppers and tomatos with a Greek influence.

Recipe Ingredients for Heracaniac's Mediterranean Stuffed Tomatos & Poblano Peppers

6 Peppers, Poblano, roasted, peeled and deseeded(11333)
6 plum tomatoes (11882)
2 cups tomatos, crushed (11693)
1 lb. ground venison (17344)
1 c. uncooked wild rice (20088)
4 tbsp. shallots, finely chopped (11677)
3 garlic cloves, finely chopped (11215)
2 tbsp. tomatoes, sun-dried (11955)
1/2 cup feta cheese
1 tsp. oregano
1 tsp. basil

Recipe Directions for Heracaniac's Mediterranean Stuffed Tomatos & Poblano Peppers

  1. Roast the peppers and remove skin and seeds.

  2. Cut the tops from the tomato and scrape out the pulp.

  3. Combine everything but peppers, plum tomatoes and crushed tomato in a large bowl.

  4. Mix well.

  5. Put 1 cup of the crushed tomatoes into the bottom of a baking dish.

  6. Stuff the peppers and tomatos with the mixture.

  7. Return the tops to the tomatoes and pour the rest of the crushed tomatos over the peppers.

  8. Bake in a 350 degree oven for 1 hour.
