Mmmm, mmm GOOD! Fewer calories and less sodium, more fiber and protein, wayyy more Vit A, C, calcium and iron than a comparable sized serving (the whole can) of Campbells' 25% reduced sodium tomato soup. You will never open a can of tomato soup again once you've had this soup.

Recipe Ingredients for Henri's Tomato Soup

28 oz whole tomatoes with basil
6 tbsp fat-free half and half
1/2 cup chicken broth, low sodium
2 tbsp sugar
1 tsp basil
1 Black pepper, to taste

Recipe Directions for Henri's Tomato Soup

  1. Puree canned tomatoes in blender. Add all ingredients to pot except sugar and pepper. Add 1 Tbsp sugar and taste to see if you need the rest. Bring to a boil, lower heat and simmer for about 15 minutes. Add pepper to taste.

  2. Makes 2 - 2 cup servings. Double if you need more. You'll want more it's so good. And good for you.
