Easy orzo pasta and sauteed vegetables.

Recipe Ingredients for Henri's Orzo and Vegetables

34 g onion
48 g red peppers
149 g squash
66 g portobella mushrooms
65 g spinach
93 g tomato
3 1/4 oz orzo pasta
1 1/2 oz feta cheese

Recipe Directions for Henri's Orzo and Vegetables

  1. 34 g onion

  2. 48 g red peppers

  3. 149 g squash

  4. 66 g portobella mushrooms

  5. 65 g spinach

  6. 93 g tomato

  7. 1 clove garlic

  8. 3.25 oz orzo pasta

  9. 1.5 oz feta cheese

  10. Cook orzo while cooking vegetables.

  11. Cut all vegetables to the size you desire. Saute vegetables over medium high heat. Add tomato and spinach just before the rest of the vegetables are done, as these cook quickly.

  12. Season as you wish. I use Mrs. Dash regular, Mrs. Dash Garlic & Herb, a bit of salt and 1/2 tsp of oregano.

  13. Mix cooked, drained orzo in with seasoned vegetables. Add feta, give it a good stir, and it's done.
