Recipe Ingredients for HENDRY'S CARROT CAKE

4 eggs
100 gram butter
100 gram yoghurt
100 gram vegetable oil
100 gram brown sugar
100 gram white sugar
50 gram honey
100 gram applesauce
2 teaspoons vanilla extract
250 gram all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
250 gram carrots
75 gram coconut
100 gram walnuts
50 gram raisins

Recipe Directions for HENDRY'S CARROT CAKE

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

  2. Grate the carrots and coconut, chopped the pecans. Shift all dry ingredients.

  3. In a large bowl, beat together eggs, butter, yoghurt, vegetable oil, brown sugar, white sugar, honey, apple sauce and 2 teaspoons vanilla till thick.

  4. Mix in shifted flour, baking soda, baking powder, salt and cinnamon. Stir in raisin, carrots and coconut. Fold in walnuts. Pour into prepared pan.

  5. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  6. To Make Frosting: In a medium bowl, combine 115 gram softened butter, 225gram cream cheese, 300gram confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped almonds. Frost the cooled cake.
