Italian flat bread, flavored and fragranced with fresh oregano and other herbs

Recipe Ingredients for helen's fresh herbed foccicia

8 cups flour, all purpose
2 pkg yeast
2 cups water
1 tbs sugar
2 tbs oregano
1/2 tsp basil
1/2 cup cheese, parmesan
2 tbs oil, olive

Recipe Directions for helen's fresh herbed foccicia

dissolve yeast in 2 cups warm water, sugar and olive oil in bottom of mixer bowl. add 3-4 cups flour and start mixer with dough hook. add additional flour 1/4 cup at a time until all flour is used or dough no longer sticks to side of bowl and is elastic and smooth. cover dough in olive oil and let dough rise in oiled bowl in a warm place for 30-45 minutes until doubled in volume. punch down and seperate into 2 equal parts. make ball out of each dough section and flatten into circles about 1/2 inch thick. sprinkle with parmesan cheese and bake in 425 oven for 13-16 minutes or until golden brown. Cut in eighths and serve warm.
