When I'm too lazy to roll individual enchilada's!

Recipe Ingredients for Helen's Enchilada Pie

2 lbs ground beef
20 corn tortillas
24 oz red chili sauce
1 lb cheddar cheese
1/2 lb montery jack cheese
16 oz olives
1/2 cup green onions
1/3 cup canola oil

Recipe Directions for Helen's Enchilada Pie

  1. spray 9 x 13 pan with pam

  2. fry tortillas for a minute or two, then dip into heated chili sauce before covering bottom and sides of baking dish.

  3. layer half the cooked ground beef, half of all the cheeses, half the olives and green onions, and pour half chili sauce over it.

  4. repeat, starting with second layer of tortillas.

  5. bake at 350 for 30 minutes until cheese melts and bubbles.
