This perfect summer soup comes from an Andalucian grandma. Another variant uses stale bread soaked in water in the mix, in which case it is called salmorejo but that means more calories too.

Recipe Ingredients for Hector's Abuela's Gazpacho

4 large tomatoes
1 cucumber (peeled)
200 ml water
1/3 cup olive oil
3 tablespoons red wine vinegar
2 cloves garlic
1 salt and pepper

Recipe Directions for Hector's Abuela's Gazpacho

Remove tomato skins by dropping them in hot water. Combine all ingredients in a blender, drizzling the oil slowly at last. Make in advance and store in the refrigerator for up to three days. Can be served with ice cubes, croutons, boiled egg, herbs, diced onion and peppers, etc.
