Threw all the random veggies in my freezer in a soup pot

Recipe Ingredients for Heather's Vegetable Barley Soup

10 oz baby bella mushrooms
1 medium zucchini
14 oz can diced tomatoes
5 oz fresh spinach
3 medium carrots
1 cup chopped celery
2 tbsp fresh basil
2 cup low sodium chicken broth
1 medium onion
1/2 cup barley
1 tbsp extra virgin olive oil
1 clove garlic
2 tsp curry powder
1/2 tsp ginger powder

Recipe Directions for Heather's Vegetable Barley Soup

  1. Heat olive oil over medium

  2. Add onion and garlic, saute until soft

  3. Add remaining vegetables and cook for 10 minutes (or until tender) over medium heat

  4. Add chicken broth, curry powder, ginger, and barley. Add salt or pepper to taste.

  5. Simmer over low for 30 minutes or until barley is cooked.
