This is a first attempt to lower the calories of the old Betty Crocker recipe. Substituting applesauce for the butter and egg whites for the whole eggs would further reduce the calories and fat. I've also read recipes adding chopped apples to the mix.

Recipe Ingredients for Heather's Lower Calorie Pumpkin Bread

2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves
48 tsp. SPLENDA brown sugar blend
1/3 cup butter
2 eggs
1 cup canned pumpkin
1/4 cup fat free milk
1 tsp. vanilla extract
1/2 cup raisins

Recipe Directions for Heather's Lower Calorie Pumpkin Bread

  1. Preheat oven to 350 (325 for lighter bottom).

  2. Spray loaf pan with cooking spray.

  3. In a small bowl, combine flour, baking powder, baking soda, salt, ginger and cloves. Set aside.

  4. In a mixer bowl beat together butter, sugar, eggs, pumpkin, milk and vanilla until creamy. Add the flour mixture and mix until smooth.

  5. Stir in the raisins. You may also add your choice of chopped nuts at this point.

  6. Pour into prepared loaf pan.

  7. Bake in the center of preheated oven for 55 to 60 minutes until wooden toothpick inserted into the center comes out clean. Cool in pan for 10 minutes. Remove bread from pan and continue cooling on a wire rack.

  8. Wrap in plastic and store overnight before slicing.

  9. Makes 1 loaf.
