Healthy Chicken dish. Easy for taking to lunch.

Recipe Ingredients for Heather's Healthy Chicken Lunch

1 1/4 lb chicken breast
2 cucumbers
3 large tomatoes
6 tbls lemon juice
2 tbls lime juice
1 tbls minced garlic
1 yellow onion
1 1/2 cups raw barley
3 scallions
1 tbls oregano
3 tbls extra virgin olive oil
1/2 tsp salt
1 cup cilantro

Recipe Directions for Heather's Healthy Chicken Lunch

Boil chicken enough to shread. Cook barley as directed. Seed tomatoes and cucumbers before chopping along with onion and scallions. Add to bowl and mix with rest of the ingrediants.
