Ultra high fiber & protein, ultra low calories & sugar, this is a SUPER DELICIOUS mini-meal in itself.

Recipe Ingredients for Heather's Fruit & Fiber Muffins

2 cups Cheerios, crushed
3/4 cup bran flakes, finely ground
1 cup wheat bran
1 cup rye flour
2 1/4 tbsp Flaxseed (grind)
1 teaspoon ground cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 cup dry nonfat instant milk
1/2 cup hot water
2 tbsp molasses
1 3/4 cups unsweetened applesauce
4 egg whites
1/4 cup raisins
1/4 cup chopped fresh cranberries
1/4 cup finely chopped apples
1/4 cup chopped frozen blueberries

Recipe Directions for Heather's Fruit & Fiber Muffins

  1. Heath oven to 350. Grease 12 muffin cups w/ cooking spray.

  2. Crush cereal (use blender). Mix together cereals, flour, bran, cinnamon, baking powder & baking soda.

  3. In a separate large bowl, mix warm water and dry milk powder; stir until dissolved. Add molasses and stir till mixed. Then add applesauce and mix well. After beating separately, mix in the egg whites.

  4. Pour wet ingredients over dry and stir just until mixed. Add fruit and stir just until mixed.

  5. Divide batter evenly among muffin cups. Bake 40 minutes, until middle is cooked. (This recipe is still being developed).
