Easy, healthy, full of protein and veggies for a good morning kick-start.

Recipe Ingredients for Heather's Easy Breakfast Omlette

3/4 cup egg whites
1 cup spinach
1/4 cup tomato, diced
1/8 cup mushroom, diced
1/8 cup onion, diced
1/8 tsp pepper
1/4 tsp olive oil

Recipe Directions for Heather's Easy Breakfast Omlette

  1. Dice vegetables.

  2. Chop up spinach.

  3. Saute vegetables in 1/4 tsp olive oil in a non-stick pan.

  4. Remove from heat and set aside with spinach.

  5. Measure out 3/4 cup egg whites, beat if desired.

  6. Pour into pan and season with pepper.

  7. Once mostly cooked through, layer the vegetables and spinach to one side of the omlette.

  8. Flip other half of omlette onto the vegetables and cook (covered if desired) for 1 minute.

  9. Flip entire omlette and cook other side until firm.
