Recipe Ingredients for Heather's crustless lower calorie Quiche

6 eggs
2 tablespoons of whole wheat flour
1/2 cup of soy milk
8 ounces frozen spinach
0.28 pounds of chicken
1 small potato
1/4 cup shredded carrots
1 tablespoon olive oil
2 ounces of feta cheese

Recipe Directions for Heather's crustless lower calorie Quiche

  1. Bake or slice and pan fry the potatoes and set aside.

  2. using a wire whisk, mix eggs, soy and milk flour.

  3. Mix in sliced chicken sausage, spinach, sliced potatoes; pour into a lightly oiled baking dish.

  4. Crumble 2 ounces of feta cheese onto the top of the quiche.

  5. Bake at 350 degrees for approximately 35 minutes. Edges and top will be golden and puffy when done. If you use a glass baking dish, you can visually determine if the quiche is done all the way through.
