This recipe is low fat and low calorie. The applesauce makes this a much moister bread than traditional recipes.

Recipe Ingredients for Heather's Apple Pumpkin Bread

2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground allspice
24 tsp. SPLENDA brown sugar blend
1 cup canned pumpkin
1/3 cup unsweetened applesauce
1/4 cup chopped apples
2 large egg whites
1 tsp. vanilla extract
1/4 cup low fat milk
1/2 cup raisins

Recipe Directions for Heather's Apple Pumpkin Bread

  1. Preheat oven to 325.

  2. Spray loaf pan with cooking spray.

  3. In a small bowl, combine flour, baking powder, baking soda, salt, ginger, cloves, allspice and salt. Set aside.

  4. In a large mixing bowl, beat together brown sugar, pumpkin, applesauce, egg whites, and vanilla. Add the flour mixture and mix until smooth. Stir in the apples and raisins. Nuts if you wish.

  5. Pour into prepared loaf pan.

  6. Bake in preheated oven for 60 minutes. Until wooden toothpick inserted comes out clean. (Reduced cooking temp may require longer cooking time, but bottom should be lighter).

  7. Cool 10 minutes in pan. Remove from pan and cool completely on wire rack. Wrap in plastic wrap overnight before slicing.

  8. Makes 1 loaf.
