Recipe Ingredients for Heather Leigh's Velvety Butternut Squash Soup

1 T butter
1 T olive oil
1 medium onion
5 stalks celery
3 large carrots
4 cups butternut squash
48 oz low sodium chicken broth

Recipe Directions for Heather Leigh's Velvety Butternut Squash Soup

  1. peel and seed butternut squash.

  2. chop all other veggies.

  3. Sautee onion and celery in oil and butter.

  4. When onion and celery are transparent, add carrots and squash.

  5. Cover with chicken broth and boil until veggies are soft.

  6. Strain the soup, reserving liquid, so that you have just veggies left.

  7. Using an emersion blender (or carefully using a countertop blender, being very very cautious), blend veggies, adding liquid as needed to make blending possible.

  8. Once pureed, add back in liquid until it reaches your desired consistancy.

  9. Enjoy!
