Recipe Ingredients for Heather Leigh's Stuffed Zucchini

8 small zucchini
1/2 c marinara sauce
3/4 c Parmesan cheese, grated
1/2 medium red onion
2 cloves of garlic

Recipe Directions for Heather Leigh's Stuffed Zucchini

  1. Slice zucchinis in half.

  2. Scoop out insides, leaving shells.

  3. Salt zucchini shells and bake in a 375 degree oven while preparing the rest stuffing.

  4. Microwave the insides with the other ingredients, all grated or shredded.

  5. Put stuffing stuff in a bag, snip off the corner, and squeeze into the empty zucchini shells.

  6. Bake again about 15 minutes.

  7. Remove from oven, enjoy!
