2 medium red peppers
1 serving pearl onions
16 oz mushrooms
3 small zucchinni
5 small carrots
1/2 head, small cauliflower

Recipe Directions for heather leigh's roasted veggies II

  1. chop all veggies into bite size peices (except pearl onions, just peel them)

  2. put on shallow baking dish(es) it took three to get them in one layer, for me.

  3. spray quickly with pam

  4. salt

  5. pepper

  6. bake at 400*F until browned on edges
