Really tasty, and looks fancy enough for pot-lucks. Using whole wheat couscous, low fat feta, and fat free italian dressing greatly reduces calorie impact and increases nutritional value.

Recipe Ingredients for Heather Leigh's Greek Cous Cous Salad

1 c couscous
2 large tomatos
1 large cucumber
8 oz feta
1/4 c italian dressing

Recipe Directions for Heather Leigh's Greek Cous Cous Salad

  1. Cook couscous omitting any salt or water. Drain. Cool.

  2. Chop tomatos and cucumbers into 1/2 inch cubes.

  3. Mix couscous, veggies, and feta together.

  4. Toss with italian dressing.

  5. Refridgerate at least an hour or two to let flavors combine.

  6. Enjoy!
