Recipe Ingredients for Heather Leigh's Crustless Quiche

1 T olive oil
2 T 2% milk
1 medium onion
10 oz spinach
8 oz mushroom
5 large eggs
1 t sugar
1/2 c feta

Recipe Directions for Heather Leigh's Crustless Quiche

  1. sautee onions in 1/2 T olive oil and 1 t sugar until carmelized.

  2. set aside.

  3. sautee mushrooms in 1/2 T olive oil, salting to release water, until browned.

  4. set aside.

  5. sautee spinach in pan with residual oil until wilted.

  6. cool.

  7. whisk together eggs, and milk. add in spinach and feta.

  8. in a round pie pan, layer: mushrooms, then egg/spinach/feta mixture, then sprinkle carmelized onions on top.

  9. bake at 350 degrees (f) until cooked through, about 25 minutes.
