You can switch out the veggies as you please. I think that mushrooms, yellow/orange peppers, yellow squash, and zucchini would all go well with this salad. Plus it's cute. I love eating this with my homemade Red Wine Vinegarette (Check out that recipe!)

Recipe Ingredients for heather leigh's Confetti Salad

4 c lettuce, torn
1 medium red pepper, diced
1/2 medium red onion, diced
1 medium green onion, diced
1 medium cucumber, diced
4 oz Feta Cheese

Recipe Directions for heather leigh's Confetti Salad

  1. Tear lettuce into salad size pieces.

  2. Chop remaining veggies into equal sized small pieces and mix together. (This should look like confetti.)

  3. Layer 1 c lettuce, 1/4 confetti mixture, and 1 oz feta cheese together into a salad dish.

  4. Enjoy!
