Recipe Ingredients for Heather Leigh's Breakfast Cups

5 eggs, whole
1 c lowfat buttermilk
4 oz mushrooms, sliced
1 red pepper
1 small onion
6 1/2 oz lean turkey sausage patty, one 12 patty package

Recipe Directions for Heather Leigh's Breakfast Cups

  1. Cook turkey patties in a pan on medium heat. Put turkey patties in a muffin tin.

  2. Reserve pan drippings.

  3. Chop mushrooms, onion, and pepper in a small dice. Move to pan and cook until softened.

  4. Whisk eggs and buttermilk together.

  5. Add the sauteed veggies to the eggs. So the eggs don't cook on you, temper them with a little of the veggie mixture, then add the rest in increments.

  6. Pour the egg/veggie mixture over the turkey patties, filling all cups. Should be just enough to completely fill all cups.

  7. Bake in a 350 degree (F) oven until done, about 15 minutes.
