Hearty winter dinner in one dish!

Recipe Ingredients for Hearty Winter Squash and Turkey Sausage

1 c. uncooked brown rice
2 c. water
1 tsp chicken bouillon
2 tsp olive oil
1 medium yellow onion
3 cloves garlic
3 1/2 servings louis rich turkey smoked sausage
4 c. butternut squash
1 large sweet potato
1 tsp curry
1 tsp chili powder
1 tsp pepper
1/2 tsp sea salt

Recipe Directions for Hearty Winter Squash and Turkey Sausage

  1. Roast the sweet potato (1 extra-large or 2 small) and 1/2 medium sized butternut squash in a roasting pan on 400 degrees for 40 minutes

  2. Remove skin from butternut squash and sweet potato and cut into larger cubes

  3. In a saucepan, combine 2 c. water, 1 chicken bullion cube, and 1 c. brown rice.

  4. Bring to a boil and then turn heat on low to simmer for 45 min.

  5. While rice is cooking, in a skillet saute onion in olive oil until almost clear.

  6. Add garlic and saute

  7. Add sausage and cook on medium-low until sausage is cooked

  8. Add curry, chili powder, pepper, and sea salt, to taste.

  9. In a large casserole dish, combine cooked rice, squash, and sausage mixture. If mixture looks dry, add up to 1/3 c. water. Bake at 300 degrees for 30 minutes.
