Recipe Ingredients for Hearty Wild Rice Soup

2 tsp Canola Oil
2 cups Chopped fresh white mushrooms
1 lb Lean ground beef
1 cup chopped onion
1 tsp Dried tarragon
3 tbsp flour
6 cups Beef Broth
1/2 cup Wild rice
1/2 cup grated carrot

Recipe Directions for Hearty Wild Rice Soup

  1. Heat cooking oil in large saucepan on medium. Add next 4 ingredients. Scramble-fry for about 10 minutes until beef is no longer pink. Drain.

  2. Sprinkle with flour. Heat and stir for 1 minute.

  3. Add broth and rice. Stir. Bring to a boil. Reduce heat to medium-low. Simmer, covered, for about 50 minutes, stirring occasionally, until rice is tender.

  4. Add carrot. Stir. Cook, uncovered, for about 2 minutes, stirring often, until carrot is tender-crisp. Skim any fat from surface of soup. Makes about 8 cups (2l).
