Makes 6 servings



Basic blended soup recipe for cold days, can tweaked for almost any taste. Works just as well with almost any vegetables.

Recipe Ingredients for Hearty Vegetable Soup

2 tbsp olive oil
2 cloves garlic minced
1 small onion
1 acorn squash
1 lb asparagus cut in one inch pieces
1 medium potato
4 c chicken stock
1 c water
1 salt
1 pepper
1/2 tsp Rosemary
1/2 tsp Thyme
1/2 tsp Basil
1/2 tsp Oregano

Recipe Directions for Hearty Vegetable Soup

  1. Saute garlic and onion in olive oil. About five minutes.

  2. Add all veggies. Cook about five minutes, stirring often.

  3. Add stock and water and continue to cook, partially covered for 30-40 minutes or until vegetables are tender.

  4. Season to taste and blend soup either with an immersion blender, or in small batches with a regular blender or food processor.
