Winter vegetables for a healthy, filling soup. (I sometimes use the left-over vegetables and stock from a chicken or lamb roast after removing any excess fat by refrigerating it so that the fat separates)

Recipe Ingredients for Hearty Vegetable Soup

200 g parsnip
1/2 swede
1 potato
3 carrots
1/2 cup onion
2 spring onions
1 litre water
1/2 tsp chilli powder
1 vegetable bouillon cube

Recipe Directions for Hearty Vegetable Soup

  1. Chop all the vegetables and onions into 1" pieces

  2. Place all the ingredients into a pan, cover and bring to a boil

  3. Simmer for 30 mins. Remove from the heat and let the soup cool

  4. Puree the vegetables and liquid in a blender, then return it to the pot and heat gently for 5 mins
