A flavorful soup/stew with tons of veggies and lean meat, minus the fat and pasta found in a typical minestrone!

Recipe Ingredients for Hearty Vegetable Minestrone

1 cup frozen vegetables, mixed
1/2 white onion, chopped
2 cloves garlic, minced
1/2 lb lean ground turkey
1 cup spinach
1/4 cup cremini mushrooms, sliced
3/4 cup tomato sauce, no salt added
14 oz diced tomatoes, with juices
1 cup red kidney beans, boiled
2 cups chicken broth, reduced sodium, low fat
1/2 cup red wine
1 tbsp dried italian seasoning
1/2 tsp pepper
1/4 tsp red pepper flakes
1/4 tsp salt

Recipe Directions for Hearty Vegetable Minestrone

  1. Cook the ground turkey, onion, and garlic over medium heat until onion is tender and turkey is cooked through.

  2. Add the red wine, simmering for 2-3 minutes.

  3. Next, add the diced tomatoes (plus juices), tomato sauce, chicken broth, and all of the veggies.

  4. Add seasonings, and stir thoroughly.

  5. Bring to a boil, then simmer for 10 minutes.

  6. Add the spinach, and stir it through until tender.

  7. Ladle into bowls and serve with on its own or with crusty bread.
