A delicious vegetarian alternative to meat loaf.

Recipe Ingredients for Hearty Vegetable Loaf

3 cups carrots, grated
1 cup potato, grated
2 cups zucchini, grated
1/2 cup onion, grated
1 teaspoon garlic, crushed
3 large eggs
4 tablespoons flour
1/4 cup fat free milk

Recipe Directions for Hearty Vegetable Loaf

  1. Preheat the oven to 180 deg celcius.

  2. Combine all the vegetables in a large bowl.

  3. In a separate bowl, beat together the remaining ingredients and then add the mixture to the vegetables and stir well.

  4. Press the mixture into a greased 25cm square ovenproof dish, and bake at 180 deg celcius for 50 min.

  5. Serve with a lite cheese sauce.
