A vegan barley soup that is chock full of great veggies

Recipe Ingredients for Hearty Vegetable Barley Soup

9 clove Garlic
2 medium raw Onion Red
2 medium raw Leeks
3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin
1 large raw Zucchini
23 medium Carrots, Baby
9 large (1" to 1-1/4" dia) Radishes
3 medium raw Tomato Roma
1 cup Barley, Pearled
4 stalk, medium (7-1/2" - 8" long) Celery

Recipe Directions for Hearty Vegetable Barley Soup

Fill a 6 QT pot halfway with filtered water. Chop all veg and bring to a boil. Simmer until veggies are tender. In the meantime, cook barley according to package directions, minus 15 minutes. Add almost done barley to the soup and continue to simmer for another 15 minutes. Season as you like! I use lots of dill, garlic powder, celery seed, a little cumin, white pepper, and a little sea salt
