Recipe Ingredients for Hearty Tuscan Bean Stew

2 cups dried beans
1 tbsp olive oil
4 bacon
1 1/2 cups onion
3/4 cup celery
1 cup carrots
8 cloves garlic
4 cups chicken broth
3 cups water
3 cup diced tomatoes
1 pound kale
1 black pepper

Recipe Directions for Hearty Tuscan Bean Stew

  1. Dissolve 3 tbsp salt in 4 qts cold water in large bowl. Add beans and soak at room temperature for at least 8 hours to 24 hours. Drain and rinse well.

  2. Adjust oven rack to lower middle position and heat oven to 250 degrees. Heat oil and bacon in large dutch oven over med heat. Cook stirring util bacon is lightly brown. Add onion, celery and carrots. Cook until vegetables are softened. Stir in garlic and cook another minute. Stir in broth, water, bay leaves and beans. Increase heat to high and bring to a simmer. Cover pot and transfer to oven. Cook until beans are almost tender 45-60 minutes.

  3. Remove pot from oven and stir in kale and tomatoes(drained and rinsed). Return pot to oven for 30-40 minutes longer.

  4. Remove poot from oven and submerge rosemary. cover and let stand 15 min. Discard bay leaves and rosemary and season with salt and pepper to taste. If desired, use back of spoon to press some beans against side of pot to thicken stew.
