Recipe Ingredients for Hearty Turkey Soup

12 cup (8 fl oz) Water
1.5 cup, diced Celery
5 carrot (7-1/2") Carrots
1 slice, medium (1/8" thick) Onions
2 tsp Sea Salt
0.75 Teaspoon Thyme
1 serving Chicken Bouillon Cubes
1 tsp, crumbled Bay Leaf
0.33 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.5 cup Milk, Nonfat, Fluid
1 small Rutabagas
0.5 tsp Pepper, Black
8 oz Turkey Breast Meat

Recipe Directions for Hearty Turkey Soup

  1. Combine turkey carcass with water, 1 cup chopped celery, 2 cut-up carrots, 2 tsps. salt, thyme, bouillon, and bay leaf in stock pot. Bring to a boil, lower heat, and cover. Simmer 2 hours. Strain stock, and discard solids. Skim off fat. Pick meat off bones when cooled.Reserve meat.

  2. Combine 6 Tbsps. flour and 1/2 cup milk in a jar with a tight fitting lid. Shake to combine. Pour stock into pot. Bring to simmering. Strain flour mixture thru sieve into stock, stirring.

  3. Slice remaining 3 carrots. Add chopped rutabaga, ground pepper, remaining1/2 cup celery, and sliced carrots. Simmer 20 minutes, or until veggies are tender.

  4. Add turkey meat, cook 3 minutes, or until heated through.
