Thick, rich chili with just a little ground turkey (could easily be made vegetarian)

Recipe Ingredients for Hearty Turkey Chili

1 tblsp olive oil
1/2 tsp crushed red pepper
1 clove garlic, minced
1 small onion, diced
1 bell pepper, diced
1/2 lb turkey breast, ground
15 oz. dark red kidney beans
15 oz. black beans
15 oz. chick peas
15 oz. diced tomatoes, with jalapenos
15 oz. diced tomatoes
1/2 tsp salt
1/2 tsp pepper
1 tblsp cumin
1 tblsp chili powder
1 1/2 cups frozen corn

Recipe Directions for Hearty Turkey Chili

Heat oil over medium heat in large stock pot. Add red pepper and garlic and heat until fragrant. Add onion and bell pepper and cook until soft. Add turkey, if using, and cook until no longer pink. Add all beans and tomatoes. Stir, cover, lower heat to medium low and cook for 20-30 minutes. Reduce heat to low and let simmer, uncovered for as long as you want, adding corn 15 minutes before serving. The longer it sits, the better it gets. If it dries out, add a little water or chicken/vegetable broth.
