Hearty Tomato & White Bean Soup; serves 10 (1-cup) servings

Recipe Ingredients for Hearty Tomato & White Bean Soup

56 ounces crushed tomatoes
1 medium onion, diced
2 garlic cloves, crushed
2 tbs olive oil
30 ounce white kidney Beans, undrained
2 tsp kosher salt
1 tsp black pepper
1 tsp crushed red pepper
2 tbs brown sugar, packed

Recipe Directions for Hearty Tomato & White Bean Soup

  1. Add olive oil to a large stock-pot; over medium heat cook diced onion until soft and transparent; add garlic clove until soft and fragrant; do not brown.

  2. Add 2 cans of crushed tomatoes to onion and garlic; bring to a boil; lower heat to simmer and add undrained Cannelli beans, salt, black pepper, crushed red pepper and brown sugar; bring back to a boil and cook until thickened and reduced-slightly.

  3. Use and Emulsion blender to puree beans if desired, or they can be left whole.

  4. Serve hot.
