Recipe Ingredients for Hearty Tomato-Vegetable Sauce

1 tablespoon olive oil
2 teaspoons minced garlic
2 cups onions
2 1/2 pounds plum tomatoes
2 carrots
1 green bell pepper
1/2 pound mushrooms
1/2 cup bulgur
2 teaspoons oregano
1 teaspoon basil
1 teaspoon fennel seeds
1/4 teaspoon crushed red pepper flakes
1 teaspoon salt
2 teaspoons balsamic vinegar

Recipe Directions for Hearty Tomato-Vegetable Sauce

  1. Heat oil in cooker.

  2. Cook garlic over medium-high heat, stirring constantly, until browned.

  3. Immediately add onions and continue to cook, stirring frequently, for 1 minute.

  4. Stir in tomatoes, carrots, pepper, mushrooms, bulgur, oregano, basil, fennel, red pepper flakes, and salt.

  5. Lock lid in place.

  6. Over high heat, bring to pressure.

  7. Lower heat just enough to maintain high pressure and cook for 10 minutes.

  8. Allow the pressure to come down naturally or quick-release pressure by placing cooker under cold water.

  9. Remove lid, tilting away from you.

  10. Stir well.

  11. Add a bit of balsami vinegar to perk up the flavors, if desired.
