Recipe Ingredients for Hearty Tomato, Sausage & Bean Soup

4 tsp vegetable oil
1 c onion, finely chopped
1/2 c carrot, finely chopped
1/2 c celery, finely chopped
1/2 c turnip, finely chopped
1 c yellow sweet pepper, chopped
1 c. green beans, cut into 1 inch pieces
2 c baby spinach
2 tbsp garlic, minced
16 oz Italian Sausage, casings removed
2 cans (28 oz) diced tomatoes, with no salt added
1 can (19 oz) navy beans, drained & rinsed
1 c chicken broth
1 c water
1/3 c fresh oregano, chopped
1 tsp sugar

Recipe Directions for Hearty Tomato, Sausage & Bean Soup

  1. In Dutch oven, heat oil over medium heat; cook onion, carrot, celery, yellow pepper, green beans, turnip, garlic, salt & pepper, stirring occasionally until softened, about 6 min.

  2. Add sausages, saute over med-high heat for 5 minutes, breaking up with spoon.

  3. Stir in tomatoes. Add beans, broth, water, oregano & sugar.

  4. Bring to boil, reduce heat and simmer until slightly thickened - 15 to 20 minutes.

  5. Add some hot pepper sauce (if desired) if you like a nip.
