This recipe gives you big flavor, but at a reasonable calory expense. It is a great little mid-week vitamin boost for picky eaters as well, as the only thing they will find is a few pieces of chorizo. Using low-sodium veggie stock (we dont have one int he recipe analyzer???) is handy of you are trying to cut down on salt. A spray of lo-cal oil in stead of olive oil is fine too.

Recipe Ingredients for Hearty Tomato, bean and Chorizo soup

2 cups onion
1 cup carrot
2 cups leek
1 cup celery
3 cloves garlic
1 tbs Extra Virgin Olive Oil
2 1/2 liters stock, vegetable
12 tomatoes
2 cups roasted pepper
3 tbs smoked paprika
6 cups beans, kidney
400 grams chorizo, diced small
2 tbs Balsamic vinegar

Recipe Directions for Hearty Tomato, bean and Chorizo soup

  1. Chop the onion, garlic, leek, celery and carrot. Dont worry about shopping it too fine - we will blend this recipe with a stick blender later.

  2. Heat a tablespoon of EVOO in a big stockpot and soften your vegetables for about 10 minutes. Do not add the garlic until the last minute. Chop you chorizo into little 1/2 inch cubes.

  3. Add the stock, peppers and the tomatoes, and bring the whole thing to a simmer. Let it simmer gentle for about 20 minutes to make sure the tomatoes are cooking nicely. If no-one likes beans, add them now and they will never notice they are eating them.

  4. Blend the soup until smooth. Add smoked paprika, balsamic vinegar, chorizo and the beans if you did not do so already. Let the whole thing simmer for a further 20 minutes to blend the flavors.

  5. Serve with some nice rustic 12-grain bread.
