Yummy thick soup. If it's not rich enough, add sour cream. I left off salt because of my damned blood pressure. grrr. YOU add it, okay? Wonder where they get the salt from. I don't add any to my broth...

Recipe Ingredients for Hearty TASTING butternut squash soup

3 cups butternut squash
3 carrots
2 onions
1 tablespoon butter
2 tablespoons olive oil
4 cups chicken broth
1 cup cider
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon black pepper
1/8 teaspoon cloves
1/8 teaspoon ginger

Recipe Directions for Hearty TASTING butternut squash soup

  1. I'm guessing that three cups--but one butternut squash peeled and chopped doesn't register here.

  2. brown the onions in the butter olive oil mix

  3. add everything but the cider and cook over low heat until the veggies are tender.

  4. add cider

  5. blend the dickens out of it (my niece likes it with lumps, I like it purely smooth)
