A "stick to your ribs" 1 pan dinner. High protein, low fat. *** I use 99% fat free turkey breast, and I replace the soy sauce with Bragg liquid aminos, to cut down even more with the fat and sodium***

Recipe Ingredients for Hearty Skillet Supper

1 lb. ground turkey breast
1 large onion
3 cloves garlic
2 cups chopped carrots
2 cups chopped potatoes
1 cup uncooked brown rice
3 cups water
3 tablespoons reduced sodium soy sauce
1 tsp. salt
1/4 tsp. pepper

Recipe Directions for Hearty Skillet Supper

  1. In a skillet, cook ground turkey (or lean ground beef), onion and garlic over medium heat until no longer pink.

  2. Add carrots, potatoes, rice and water, mix well.

  3. Cover and simmer for 35 min. or until rice and veggies are tender.

  4. Just before serving, stir in soy sauce, salt and pepper.
