This tangy, tasty, hearty spaghetti sauce is vegetarian, but meat can be added easily. It's very good served over cooked pasta! (This is my third attempt at putting this recipe together for this site! I hope it prints out right on the list this time!)

Recipe Ingredients for Hearty Pasta Sauce with Eggplant, Red Onion & Mushrooms

1 serving Spaghetti Sauce, serving size 1/2 cup)
4 cup, cubes Eggplant
1 tsp Parsley, Dried
1 cup chopped Red Onion
1 cup chopped raw Baby Bella Mushrooms Packaged

Recipe Directions for Hearty Pasta Sauce with Eggplant, Red Onion & Mushrooms

  1. Ingredients (Makes 9 servings)

  2. 4cup, cubes(82 g) Eggplant

  3. 1cup chopped Red Onion

  4. 1cup sliced raw Baby Bella Mushrooms Packaged

  5. 1tbsp Parsley, Dried

  6. Seasonings:

  7. Basil leaves, dried

  8. Thyme leaves, dried

  9. Oregano leaves, dried

  10. Ground Fennel seed

  11. Seasoned Salt

  12. Chipotle pepper flakes or ground black pepper

  13. Canola oil non-stick spray

  14. Directions

  15. (Ingredient list as follows:)

  16. 1. 2 1/2 cups Pasta Sauce (Meijer Gold Sun-Dried Tomato jarred pasta sauce)

  17. 2. 4 cups chopped or sliced eggplant

  18. 3. 1 cup sliced baby bella mushrooms

  19. 4. 1 cup chopped red onion

  20. 5. 1 tbsp parsley

  21. 6. Season the slices of eggplant with seasoned salt, basil, parsley, thyme, oregano and fennel

  22. 7. Sprinkle a little chipotle or black pepper on them, too.

  23. 8. Liberally spray a large skillet with canola non-stick and saute the eggplant slices on medium heat until they start to become tender and translucent.

  24. 9. Add onions and saute them until translucent, as well.

  25. 10. Last, add mushrooms and 1 tbsp dried parsley flakes.

  26. 11. Stir in 1 jar (about 2 1/2 cups) of pasta sauce (Meijer brand "Gold" Sundried Tomato flavor is good)

  27. 12. Simmer all and taste--adding more herbs (basil, etc.) to taste, if desired.

  28. 13. This recipe makes 4 1/2 cups or 9 half-cup servings.

  29. 14. Serve over cooked pasta of choice.

  30. Approximately 63 calories per 1/2 cup serving.
