This is really tasty and kick starts my day and it's not too high in calories, will sustain me until lunch and I can add 1 toast - really one of my favorites

Recipe Ingredients for Hearty Omellette

3 eggs (beaten)
1/2 cup mushrooms (sliced)
1/4 cup of broccoli
1/4 cup cheddar cheese (grated)
1/2 avocado (diced)
1 salt and pepper to taste

Recipe Directions for Hearty Omellette

  1. In a non stick skillet, cook down broccoli, mushrooms and avocado until soft and salt and pepper

  2. Once veggies are cooked, pour in your well beaten eggs, let cook and flip and when its almost cooked sprinkle the cheese and serve.
