Garbanzo bean/veggie soup. Might leave out the cayenne.

Recipe Ingredients for Hearty Meatless Minestrone (Taste of Home)

1 cup chopped onion
3 T. olive oil
1 cup chopped celery
1 cup chopped carrots
1 cup shredded cabbage
1 cup chopped green bell pepper
2 cup chopped zucchini with skin
5 cloves garlic, minced
30 oz can diced tomatoes, undrained
30 oz can garbanzo beans
16 oz can tomato sauce
3 T. dried parsley
2 tsp dried oregano
2 tsp dried basil
1 tsp salt
1/2 tsp pepper

Recipe Directions for Hearty Meatless Minestrone (Taste of Home)

  1. Sautee onion in oil x 2 min.

  2. Add celery, carrots, cabbage, green pepper, zucchini and garlic. Sautee x 3 more minutes.

  3. Add tomatoes, beans, tomato sauce, beans, and seasonings. Add water as needed (rinse out cans if water is needed, add that water). Bring to a boil. Cover and simmer x 15-30 minutes.
