Recipe Ingredients for Hearty Low-Cal Minestrone Soup by x17star17x

3 cloves garlic
1 1/2 medium onions
5 large carrots
2 cups chicken broth
2 cups water
4 cups tomato sauce
1 cup kidney beans
15 ounces green beans
2 cups baby spinach
1 1/2 pounds zucchini
1 tablespoon fresh oregano
2 tablespoons fresh basil
1/8 teaspoon salt
1/4 teaspoon pepper
6 ounces red potato
1 tablespoon olive oil

Recipe Directions for Hearty Low-Cal Minestrone Soup by x17star17x

  1. In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes.

  2. Add onion and saute for 4 to 5 minutes. Add carrots and potatoes, saute for 1 to 2 minutes.

  3. Add chicken broth, water and tomato sauce, bring to boil, stirring frequently. Reduce heat to low and add kidney beans (drained), green beans, spinach leaves, zucchini, oregano (chopped), basil (chopped), salt and pepper. Simmer for 30 to 40 minutes, the longer the better.

  4. Enjoy!
