A tasty healthy filling soup, good with fresh bread from the oven.

Recipe Ingredients for Hearty lentil & vegetable soup

2 tbsp Vegetable Oil, Canola
2 medium Carrots
2 stalk, small (5" long) Celery
115 grams Organics Green Lentils Dry
75 grams Rice, White, Long-grain, Regular, Cooked
1/2 cup cut Corn, Sweet, Yellow

Recipe Directions for Hearty lentil & vegetable soup

  1. Heat the oil in a large pan on medium heat and add celery and carrots. Cover and cook until vegetables are tender (5-7 mins).

  2. Stir in cooked lentils and uncooked rice.

  3. Stir in stock (made up to 1 litre). Bring to the boil, then reduce the heat, cover and simmer until rice is cooked.

  4. Add the corn and herbs of your choice (rosemary, diced chilli and chives work well). Cook for a further 5 minutes.

  5. Season soup if you like with salt and pepper and serve.
